  • 1          pound ground chicken
  • 1          teaspoon salt
  • 1          teaspoon cayenne pepper (optional)
  • 1/4       cup breadcrumbs
  • 4          hoagie rolls
  • 2          tablespoons butter
  • 4          slices provolone cheese
  • garlic sauce, for garnish
  1. Preheat oven to 375 F. Heat rice according to package directions.
  2. In large bowl, mix rice; chicken; salt; cayenne, if desired; and breadcrumbs.
  3. Use cookie scoop or hand roll chicken mixture into balls. Place on aluminum foil-lined sheet tray, leaving small space between each ball. Bake 25 minutes, flipping meatballs halfway through.
  4. Slice hoagies in half, lengthwise. Remove some bread from middle to make room for meatballs. Butter inside of each hoagie and place on sheet tray.
  5. Once meatballs are cooked through, turn broiler on high and place buttered hoagies in oven. Cook 1 minute, or until butter is melted and hoagie has browned.
  6. Remove hoagies from oven, place 3-4 meatballs inside (depending on size) and cover with slice of cheese. Broil on high 30 seconds to melt cheese.

  1. Preheat oven to 400 F. Heat rice according to package directions.
  2. Lay rice on parchment paper. Place another sheet of parchment paper on top. Use rolling pin to roll out rice into thin layer.
  3. Bake 20 minutes.
  4. In medium bowl, mix sour cream and ranch seasoning.
  5. Once crackers are cooked, cut into squares while still hot. Allow to cool.

  • 1          pouch (8 ounces) precooked black lentils
  • 1 1/2    cups Grapes from California, halved
  • 1          cup radicchio, torn
  • 1          cup arugula
  • chopped toasted walnuts

Rosemary Lemon Vinaigrette:

  • 1/4       cup extra-virgin olive oil
  • 3          tablespoons lemon juice
  • 2          tablespoons fresh rosemary leaves
  • 2          teaspoons honey
  • 1/2       teaspoon sea salt
  • 1          clove garlic
  • freshly ground pepper, to taste
  1. To make rosemary lemon vinaigrette: In small blender or food processor, process olive oil, lemon juice, rosemary, honey, salt, garlic and pepper, to taste, until rosemary is finely chopped; set aside until ready to use. May be made 2 days in advance and refrigerated in covered container until ready to serve. Bring to room temperature before using.
  2. In large glass bowl, microwave lentils 45 seconds, or until warm. Add grapes, radicchio, arugula and dressing to bowl and toss lightly to coat. Sprinkle with walnuts.

  • 1          cup mashed bananas (about 3 medium or 2 large)
  • 1/2       cup creamy or crunchy peanut butter
  • 1/4       cup brown sugar
  • 1          egg
  • 1/2       cup milk (or non-dairy milk of choice)
  • 2 1/2    cups old-fashioned whole oats
  • 1          teaspoon baking powder
  • 1/2       teaspoon salt
  • 1          teaspoon ground cinnamon
  • 1          teaspoon pure vanilla extract
  •             raspberry or strawberry jam, to taste

Greek Yogurt Topping (optional):

  • 1/2       cup Greek yogurt
  • 1/2       teaspoon vanilla
  • 1/2       cup powdered sugar
  • freeze-dried raspberries or strawberries, to taste
  1. Preheat oven to 350 F. Line 9-inch square baking pan with parchment paper, leaving enough overhang on sides to easily remove bars from pan. Set aside.
  2. In large bowl or stand mixer, mash bananas. On medium speed, whisk in peanut butter, brown sugar, egg, milk, oats, baking powder, salt, cinnamon and vanilla. Batter should be thick but still pourable.
  3. Pour mixture into prepared pan and use spoon or knife to swirl jam into batter. Bake 25-28 minutes, or until center is set.
  4. Remove from oven and cool at room temperature 30-60 minutes then refrigerate pan until chilled, about 1 hour.
  5. Lift parchment paper to remove bars from pan then cut into 16 equal squares.
  6. To make optional yogurt topping: In bowl, whisk yogurt, vanilla and powdered sugar until smooth. Refrigerate at least 30 minutes before drizzling on bars. Add dried fruits, as desired.
  7. Store leftover bars in airtight container and refrigerate up to 10 days.

Notes: Egg can be replaced with 1/4 cup unsweetened applesauce. Bars are difficult to cut before chilling.

Garlic Parmesan Rice and Shrimp Skillet
