Looking for a perfect dessert for your Easter dinner? Try this Lemon Mousse Cheesecake. It’s super creamy and a bit tart and, topped with slices of fresh lemon, so very pretty. The filling is on the light side, due to the beaten egg whites that are folded into the batter.
When baking he cake, be sure to use a water bath (bain marie) to temper the heat, help create a soft, creamy filling, and prevent the top from cracking. Without the water bath, the filling will be firmer—more like traditional cheesecake. If the top happens to crack, despite your best efforts, just pile on fresh lemon slices in the form of a flower. No one will be the wiser, and you’ll have created a dessert that’s as lovely as it is tasty.
Lemon Mousse Cheesecake
Crust:
5 tablespoons melted butter
40 vanilla wafers, crushed, or 8 graham crackers, crushed (about 1 1/2 cups)
1/4 cup sugar
Filling:
24 ounces cream cheese
1 1/3 cups sugar, divided
1/3 cup all-purpose flour
4 eggs, separated
1 tablespoon finely grated lemon rind
3/4 cup lemon juice (about 4 lemons)
- Preheat oven to 325F. Wrap aluminum foil around the outside bottom of a 10-inch springform pan.
- To prepare crust, combine all ingredients. Stir well and press into pan.
- Combine cream cheese and 1 cup sugar; beat until fluffy, about 5 minutes. Add flour, egg yolks, lemon rind and juice; beat until smooth. Beat egg whites, which clean beaters, until soft peaks form. Add remaining 1/3 cup sugar; beat until stiff peaks form. Fold into lemon batter. Pour batter into crust. Place pan in a large baking pan. Add water to baking pan to a depth of 1 inch. Bake about 55 minutes, until cake is set but still jiggly in the center. Cover and chill at least 4 hours. To decorate, ring the top of the cake along the outside edge with thin half-moon slices of fresh lemon. Work around the cake in concentric circles, overlapping the slices to form a flower shape. Serves 20.

Creamy Asparagus Soup

Servings: 4-6
- 2 asparagus bundles
- 3 tablespoons butter
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 3 cups broth of choice, divided
- 4 ounces cream cheese
- 1 cup Parmesan cheese
- 2 teaspoons celery salt
- 2 teaspoons Italian seasoning
- 1/2 cup heavy cream
- salt, to taste
- pepper, to taste
- chicken salad croissants, for serving
- Chop asparagus into bite-size pieces. In large pot, place asparagus, butter, onion powder, garlic powder and 1 cup broth. Cook over medium heat until asparagus gets tender.
- Transfer to blender with 1 cup broth and blend until smooth. Transfer back to pot and, over medium heat, mix in cream cheese, remaining broth and Parmesan cheese. Add celery salt and Italian seasoning. Cook while stirring, blending seasonings in well, then add heavy cream.
- Season with salt and pepper, to taste. Serve with chicken salad croissants.

Lemon Chicken Orzo Soup

Servings: 4-6
- 2 carrots
- 2 celery stalks
- 3 tablespoons butter
- 2 cups cooked, chopped chicken
- 1/3 cup lemon juice
- 2 teaspoons lemon pepper
- 6 cups broth
- 1 cup orzo
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon thyme
- 1 tablespoon sugar
- 1 cup heavy cream
- salt, to taste
- pepper, to taste
- cucumber sandwiches, for serving
- Chop carrots and celery. In pot, saute with butter.
- In bowl, mix chicken with lemon juice and lemon pepper then set aside.
- After carrots and celery are tender, add broth and orzo to pot. Then add garlic powder, onion powder, thyme and sugar. Simmer 10 minutes then add chicken and cream; simmer about 5 minutes.
- Add salt and pepper, to taste. Serve with cucumber sandwiches.

Broccoli Salad

Servings: 4-6
- 2 medium heads broccoli
- 2 apples
- lemon juice
- 1 carrot
- 1 cup blueberries
- 1 cup dried cranberries
- 1 cup sunflower seeds
- 1 cup pecans
- 1 package (2 1/2 ounces) real bacon pieces
Dressing:
- 1 cup mayonnaise
- 1/3 cup milk
- 1/3 cup apple cider vinegar
- 2/3 cup sugar
- 2 tablespoons poppy seeds
- Coarsely chop broccoli and place in large bowl. Coarsely chop apples and brush with lemon juice to prevent browning; add to bowl. Shred carrot and add to bowl with blueberries, cranberries, sunflower seeds, pecans and bacon.
- To make dressing: Mix mayonnaise, milk, apple cider vinegar, sugar and poppy seeds. Pour over broccoli salad and mix well.
