Blended Crunchy Mushroom Wraps

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 6

  • 2          tablespoons olive oil
  • 1/2       cup finely chopped yellow onion
  • 8          ounces mushrooms, such as white button, crimini or portabella, finely chopped
  • 1/2       pound lean ground beef
  • 1          tablespoon taco seasoning
  • 6          burrito-size flour tortillas (about 10 inches each)
  • 1/3       cup nacho cheese sauce
  • 6          tostada shells
  • sour cream
  • 6          mini soft taco-size flour tortillas (about 4 1/2 inches each)
  • shredded lettuce
  • diced tomatoes
  • shredded Mexican cheese blend
  • nonstick cooking spray
  1. In large skillet over medium-high heat, heat olive oil. Cook onions 1-2 minutes until translucent. Add mushrooms and ground beef. Cook about 5 minutes, or until beef is no longer pink. Stir in taco seasoning. Cook 2-3 minutes. Set aside.
  2. Lay one large flour tortilla on flat surface. Spread 2 tablespoons mushroom-meat mixture on center of tortilla.
  3. Drizzle dollop of nacho cheese over mushroom-meat mixture. Top meat with one tostada shell then spread thin layer of sour cream over tostada shell.
  4. Top with shredded lettuce, diced tomatoes and shredded Mexican cheese then one small tortilla. Make sure not to overstuff so wrap doesn’t break apart while cooking.
  5. Fold edges of large tortilla toward center until completely covered.
  6. In hot skillet, generously spray with nonstick cooking spray. Carefully place wrap seam side down on skillet. Cook 2-3 minutes until golden brown.
  7. Flip and cook other side until golden brown. Repeat with remaining mushroom-meat mixture, tortillas and toppings.
  8. Cut wraps half and serve.

Reuben Sandwich

Servings: 2

  • 2          tablespoons butter, softened
  • 4          slices rye and pumpernickel swirl bread
  • 4          slices swiss cheese
  • 6          ounces corned beef
  • 2          tablespoons, plus 2 teaspoons, Thousand Island Dressing, divided
  • 4          tablespoons sauerkraut
  1. Heat nonstick skillet over medium heat.
  2. Spread 1 tablespoon butter on one side of two bread slices. Place buttered side down in heated skillet. Add two slices cheese to each bread slice. Spread 2 tablespoons dressing over cheese slices. Add 3 ounces corned beef to each bread slice.
  3. Spread 2 teaspoons dressing over corned beef. Spread 2 tablespoons sauerkraut over corned beef.
  4. Spread remaining butter on one side of remaining bread slices. Place buttered side up on top of sauerkraut.
  5. Cook 4-7 minutes each side, flipping once, until golden brown and cheese is melted.

Irish Potato Bread

  • 2          medium or large russet potatoes
  • 1          egg
  • 1          egg white
  • 1/3       cup canola oil
  • 3/4       cup milk
  • 2          tablespoons green onion, minced
  • 1/2       teaspoon caraway seeds
  • 3 1/4    cups all-purpose flour, plus additional for dusting and kneading
  • 1 1/2    tablespoons baking powder
  • 1          teaspoon salt
  1. Heat oven to 375° F.
  2. Peel potatoes. Slice one potato and boil in saucepan 15 minutes, or until tender. Remove potato from saucepan into large bowl. Mash potato then set aside.
  3. Grate second potato onto cloth. Wring potato in cloth to remove excess water. Add grated potato to mashed potato in large bowl. Add egg, egg white, oil, milk, onion, caraway seeds, 3 1/4 cups flour, baking powder and salt. Stir with wooden spoon until mixture is soft and sticky.
  4. Turn dough onto floured surface. Adding flour as needed, knead dough to form 8-inch round shape with slight dome. Place dough onto baking sheet lined with parchment paper. Cut large “X” on top of dough about 1/2 inch deep.
  5. Bake 55 minutes until golden brown. Cool on wire rack 1 hour before serving.

  • 1/2       cup Sun-Maid Vanilla Yogurt Covered Raisins
  • 3          cups graham crackers, assorted flavors
  • 1 1/2    cups colored mini marshmallows
  • 2          cups slivered almonds
  • 1          cup chocolate chips
  1. In large bowl, mix raisins, graham crackers, marshmallows, almonds and chocolate chips.
  2. Serve immediately, or store in airtight container up to 1 week.

Apple Nachos

Prep time: 10 minutes
Cook time: 1 minute
Servings: 4

  • 5          sweet apples, such as Honeycrisp
  • lemon juice (optional)
  • 2          tablespoons peanut butter
  • 1/2       cup Sun-Maid California Sun-Dried Raisins
  1. Wash and slice apples.
  2. Arrange one layer of sliced apples on serving plate. To keep apples from browning quickly, squeeze lemon juice on top, if desired.
  3. In microwave, melt peanut butter about 30 seconds until smooth.
  4. Drizzle 1 tablespoon peanut butter over first layer of apples. Sprinkle with 1/4 cup raisins.
