(Lemon-Herb Chicken)
Yogurt Dill Sauce:
1 cup plain nonfat yogurt
1/2 cup light sour cream
1 garlic clove, finely minced
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
1/2 teaspoon salt
Chicken:
1 cup chopped fresh basil leaves
1/4 cup chopped fresh mint
2 tablespoons chopped fresh dill
1/4 cup extra-virgin olive oil
6 garlic cloves, minced
Finely grated rind and juice from 1 lemon
4 bone-in, skin-on chicken breasts (about 2 1/2 pounds)
4 bone-in, skin-on chicken thighs (about 2 pounds)
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
- To prepare sauce, combine yogurt, sour cream, garlic, dill, lemon juice and salt. Set aside.
- Preheat oven to 400F or heat grill to medium-high.
- To prepare chicken, combine basil, mint, dill, oil, garlic, lemon rind and juice in a large bowl. Add chick- en pieces; toss well to coat. Arrange chicken in a single layer on baking sheet; sprinkle with salt and pepper.
- Roast or grill chicken breasts 30 to 40 minutes, until an instant-read thermometer inserted into the thickest part registers 180F. Serve immediately or room temperature, with Yogurt Dill Sauce, lemon wedges and Spiced Yellow Rice. Serves 6.

Spiced Yellow Rice
2 tablespoons extra- virgin olive oil
1 cup chopped onion
1/2 red bell pepper, chopped
2 garlic cloves, minced
1 1/2 cups long-grain white rice
1 teaspoon turmeric
1 teaspoon cumin
2 cups reduced-sodium chicken broth
1 cup water
1/4 teaspoon black pepper
1/4 cup chopped parsley
- Heat oil in a large nonstick skillet over medium-high heat. Add onion, red pepper and garlic; cook 2 minutes. Stir in rice, turmeric and cumin; cook 1 minute. Add broth, water, salt and pepper. Bring to a boil, reduce heat to medium-low, cover and simmer until liquid is completely absorbed, 17 to 20 minutes.
- Remove from heat and stir in parsley. Serves 6.

Warm Lentil, California Grape and Arugula Salad
Servings: 6
- 1 pouch (8 ounces) precooked black lentils
- 1 1/2 cups Grapes from California, halved
- 1 cup radicchio, torn
- 1 cup arugula
- chopped toasted walnuts
Rosemary Lemon Vinaigrette:
- 1/4 cup extra-virgin olive oil
- 3 tablespoons lemon juice
- 2 tablespoons fresh rosemary leaves
- 2 teaspoons honey
- 1/2 teaspoon sea salt
- 1 clove garlic
- freshly ground pepper, to taste
- To make rosemary lemon vinaigrette: In small blender or food processor, process olive oil, lemon juice, rosemary, honey, salt, garlic and pepper, to taste, until rosemary is finely chopped; set aside until ready to use. May be made 2 days in advance and refrigerated in covered container until ready to serve. Bring to room temperature before using.
- In large glass bowl, microwave lentils 45 seconds, or until warm. Add grapes, radicchio, arugula and dressing to bowl and toss lightly to coat. Sprinkle with walnuts.

Peanut Butter and Jelly Oat Bars
Recipe adapted from Sally’s Baking Addiction
Prep time: 10 minutes
Bake time: 25 minutes
Servings: 16
- 1 cup mashed bananas (about 3 medium or 2 large)
- 1/2 cup creamy or crunchy peanut butter
- 1/4 cup brown sugar
- 1 egg
- 1/2 cup milk (or non-dairy milk of choice)
- 2 1/2 cups old-fashioned whole oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- raspberry or strawberry jam, to taste
Greek Yogurt Topping (optional):
- 1/2 cup Greek yogurt
- 1/2 teaspoon vanilla
- 1/2 cup powdered sugar
- freeze-dried raspberries or strawberries, to taste
- Preheat oven to 350 F. Line 9-inch square baking pan with parchment paper, leaving enough overhang on sides to easily remove bars from pan. Set aside.
- In large bowl or stand mixer, mash bananas. On medium speed, whisk in peanut butter, brown sugar, egg, milk, oats, baking powder, salt, cinnamon and vanilla. Batter should be thick but still pourable.
- Pour mixture into prepared pan and use spoon or knife to swirl jam into batter. Bake 25-28 minutes, or until center is set.
- Remove from oven and cool at room temperature 30-60 minutes then refrigerate pan until chilled, about 1 hour.
- Lift parchment paper to remove bars from pan then cut into 16 equal squares.
- To make optional yogurt topping: In bowl, whisk yogurt, vanilla and powdered sugar until smooth. Refrigerate at least 30 minutes before drizzling on bars. Add dried fruits, as desired.
- Store leftover bars in airtight container and refrigerate up to 10 days.
Notes: Egg can be replaced with 1/4 cup unsweetened applesauce. Bars are difficult to cut before chilling.

Garlic Parmesan Rice and Shrimp Skillet

- 1 Minute Garlic Parmesan Rice Cup
- 1 tablespoon olive oil
- 8 ounces large shrimp, peeled and deveined
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes

- lemon wedges, for garnish (optional)
- Heat rice according to package directions.
- In medium skillet, heat olive oil over medium heat. Add shrimp to skillet and cook until pink, about 3 minutes. Remove shrimp from skillet and set aside.
- In same skillet, add rice, lemon juice and red pepper flakes. Stir to combine and heat through, 1 minute. Return shrimp and stir to combine.
- Garnish with parsley. Squeeze lemon wedge over top, if desired, and serve.

- Top with wonton strips, drizzle sweet and sour sauce and serve.
Tip: To add more vegetables, try mushrooms, bell peppers, snap peas or green onions. For extra spice, drizzle on sriracha or hot sauce of choice.
