The Best Paleo Brownies (Chocolaty Goodness)

Have I got a treat for you today. Delicious, fudge-like brownies that are not even bad for you! No sugar, no flour involved. Almond butter is what makes these brownies perfectly dense and chewy. They melt in your mouth when eaten warm right out of the oven. They are also amazing served with some Paleo ice cream, a classic combo. Ready in only 20 minutes, this recipe is easy to put together and sure to please your sweet tooth.

Gooey, Chocolaty Brownies- this is my favorite brownie recipe! I make these all the time and everyone loves them.

I have experimented with several Paleo brownie mixes but this one tops the list by far. They come out of the oven very moist and chewy. That means that if you are one of those people who likes the outside edge of brownies, you might want to bake them for a few extra minutes. I mean, there are even specially designed pans dedicated to making edge-only brownies, so I know you are out there. Also, my boyfriend is one of those people. One way I knew that we were a good match was that he liked to eat the outer edge from the brownie pan and I preferred the fudgy center. Perfect.

These brownies are better than any mix from a box, and they avoid a large heaping of sugar and flour. There actually isn’t any flour in the recipe at all, even gluten-free flour. I don’t know if I would be able to tell the difference between this brownie recipe and its non-Paleo counterpart. I received compliments on them from a few lucky friends who I shared with, and not one of them knew they were eating Paleo brownies. This batch did not last long. They are easy to make and are ready in a jiffy. What are you waiting for? Go try it!

The Best Paleo Brownies (Gluten-Free & Grain-Free)
Ingredients
  1. 1 cup paleo-friendly almond butter
  2. 1/3 cup maple syrup
  3. 1 egg
  4. 2 tbsp ghee
  5. 1 tsp vanilla
  6. 1/3 cup cocoa powder (ghirardelli cocoa powder recomended)
  7. 1/2 tsp baking soda
Instructions
  1. Preheat the oven to 325 degrees F. In a large bowl, whisk together the almond butter, syrup, egg, ghee, and vanilla. Stir in the cocoa powder and baking soda.
  2. Pour the batter into a 9-inch baking pan. Bake for 20-23 minutes, until the brownie is done, but still soft in the middle.

French Onion Popcorn
Ingredients

  • 10 cups popped yellow popcorn
  • 3 tablespoons unsalted butter
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1 cup finely grated Gruyère cheese
  • 1/2 cup finely grated Parmesan cheese
    Directions
  1. Preheat oven to 300°F. Line large rimmed baking sheet with parchment paper and set
    aside. Place popcorn in a large bowl, removing any unpopped kernels.
  2. Melt butter in small saucepan or microwave safe bowl. Remove from heat and stir in
    onion powder, garlic powder, dried thyme, dried parsley, dried rosemary, black pepper
    and salt until combined.
  3. Drizzle popcorn with seasoned butter and toss well until evenly coated. Add Gruyère and
    Parmesan, tossing again to distribute cheese evenly.
  4. Spread popcorn in an even layer on prepared baking sheet. Bake, stirring halfway
    through, until cheese is melted and popcorn is lightly crisp, about 8 to 10 minutes.
  5. Let cool for 5 minutes before serving. Taste and season with additional salt, if desired

Pack pasta salad in a jar for taste of summer for school lunch

Pasta Salad in a Jar

Recipe adapted from Best of This Life
Prep time: 10 minutes
Servings: 1

Dressing:

  • 2          tablespoons olive oil
  • 2          tablespoons red wine vinegar
  • 1/8       teaspoon dried basil
  • 1/8       teaspoon oregano
  • 1/8       teaspoon parsley
  • salt, to taste
  • freshly ground pepper, to taste
  • 1/4       cup canned chickpeas, rinsed
  • 1/2       cup halved grape tomatoes
  • 1/2       cup diced cucumber
  • 2          tablespoons sliced Kalamata olives
  • 1          cup cooked pasta of choice, cooled
  • 1          cup chopped spinach
  1. To make dressing: In canning jar, combine olive oil, vinegar, basil, oregano, parsley and salt and pepper, to taste. Stir in chickpeas.
  2. Layer tomatoes, cucumbers, olives, cooked pasta and spinach over dressing.
  3. Refrigerate until ready to serve. To serve, flip jar over and lightly shake to combine dressing with other ingredients.

Grilled Chicken and Avocado Salad

Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4

  • 2          boneless, skinless chicken breasts (8 ounces each)
  • 1          teaspoon dried oregano
  • 1          teaspoon ground coriander
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2          tablespoons extra-virgin olive oil
  • 3          romaine hearts, chopped
  • 3          cups spinach
  • 2          avocados, thinly sliced
  • 2          cucumbers, thinly sliced
  • 1          apple, thinly sliced
  • 1          cup grapes, halved

Creamy Honey-Dijon Dressing:

  • 3/4       cup plain Greek yogurt
  • 3          tablespoons extra-virgin olive oil
  • 1 1/2    tablespoons honey
  • 1          tablespoon Dijon mustard
  • 1          tablespoon fresh lemon juice
  • 1          teaspoon apple cider vinegar
  • 1/4       teaspoon garlic powder
  • 1/4       teaspoon salt
  • 1/8       teaspoon black pepper
  1. Preheat grill or grill pan to medium-high heat. In medium bowl, sprinkle chicken with oregano, coriander and salt and pepper, to taste. Add oil then toss to coat.
  2. Grill chicken, covered, about 8 minutes per side, until slightly charred and registering 165 F on thermometer inserted into thickest part. Transfer to cutting board, let rest 5 minutes then thinly slice.
  3. Divide romaine, spinach, avocados, cucumbers, apples and grapes among bowls. Top with chicken.
  4. To make dressing: Whisk Greek yogurt, olive oil, honey, Dijon mustard, lemon juice, apple cider vinegar, garlic, salt and pepper. Drizzle over salad and serve.
